Loaded Baked Potato Dip

Summer time is for entertaining by the pool!! Like I’ve said, ” I LOVE to entertain’! With summer being so hot this year in New England, there is nothing better than an evening on the deck by the pool! A little grilling, kids jumping in the pool, some cold beverages, and one of my favorite party foods…Appetizers and Dips!  Easy food that you don’t have to raise the temp in your house by running the oven!   One dip that was a big hit this summer was Loaded Baked Potato dip.  I saw this on pinterest and it looked delicious.  It was a definite hit, and so easy to make! It tasted just like a loaded baked potato, and paired up with potato chips….YumLoaded Baked Potato Dip

Yield: About 4 cups

Prep Time: 10 minutes

16 ounces sour cream
16 slices (12-ounce package) bacon, cooked and crumbled
8 ounces sharp cheddar cheese, shredded (about 2 cups)
1/3 cup thinly sliced scallions or chives

Combine all ingredients in a medium bowl and refrigerate for at least one hour before serving to allow flavors to meld together. Garnish with extra shredded cheese, crumbled bacon, and chopped chives. Serve with your favorite potato chips or pretzel crisps. Dip can be stored in an airtight container in the refrigerator for up to 1 week.
